Garlicky Cauliflower Couscous

I used to disdain the idea of cauliflower rice as a strange foodstuff eaten by low carbers, but have really gotten on board with it now. The other night we wanted something to eat with shrimp with capers and garlic (previously served with rice) and thus cauliflower couscous was born!

Garlicky Cauliflower Couscous

serves 2

Ingredients

1/2 head cauliflower
2 tsp coconut oil
1 clove garlic, minced

Method

Process the cauliflower (using the 'S' blade of your food processor) until the size of couscous grains.

Melt the coconut oil over a medium in a skillet or frying pan. Add the minced garlic and saute briefly.

Add the cauliflower, stir to mix thoroughly, and either saute or cook covered on a lower heat for  4-5 minutes until fluffy and tender. Add salt and pepper to taste and serve.
