Shrimp with capers, garlic, and NO rice (from Cooking Light)

I really enjoy the recipes from Cooking Light magazine because they use real ingredients, don't eschew all fat, and are darned tasty.

Shrimp with capers, garlic and rice is a staple standby meal at my house; the ingredients are nearly always in the pantry. So, what to do in the absence of rice? Serve it with garlickly cauliflower couscous, of course!

Simply make the Cooking Light recipe for Shrimp with capers, garlic and rice, using your healthy cooking oil of choice, and omit the rice. Serve over a bed of garlickly cauliflower couscous with a side of Greek-style green beans. Good eating!

Estimated nutritional information (per portion) (shrimp only, no rice): 123 calories, 2g carb, 1g fiber, 23g protein, 3g fat, 520mg sodium
